I cook spaghetti at least once a month. One pot can last up to three days with my family size of 2 ½.  Both my husband and my daughter love it.  I prepare my meat sauce with ground turkey.  Please see recipe below.  Since I work during the week, this saves me time with dinner.  I make the sauce one night.  When I get home all I have to do is boil the spaghetti.  I also boil some frozen vegetables as well.   We need our vegetables in our diet.

 

Ingredients

  • Olive Oil
  • Pack of Ground Turkey- 1- 1.5 lbs
  • Onion
  • Green bell pepper
  • Red bell pepper
  • Garlic- one clove
  • Can diced tomatoes (Hunt’s)
  • Can of tomato paste (small one)
  • Can of tomato sauce (Hunt’s)
  • A jar of organic tomato sauce (Bertolli)
  • Seasoning- salt, pepper, garlic power, Italian seasoning
  • Soy sauce (1/2 teaspoon)
  • sugar (2 tablespoons)

 

Directions

  1. Heat your pot up on medium heat with about a tablespoon of olive oil.
  2. I chopped my vegetables (onion, bell peppers, and garlic) up first. I put the garlic in a separate bowl.
  3. After chopping up the vegetables, I sauté the onions and bell peppers in the pot for about 3-4 minutes.
  4. Then add the garlic. Cook for about 1-2 minutes more.
  5. Add the ground turkey. Add soy sauce (1/2 teaspoon) for the color.
  6. Add seasonings, about a teaspoon each. Cook and stir the ground turkey for about 5-6 minutes until meat is fully cooked. There should not be any pink left.
  7. Add can tomatoes, can tomato sauce, jar of tomato sauce, and ½ can of the tomato paste.
  8. Stir and let cook down for about 5 minutes. Once the sauce starts boiling, turn the stove down to low.
  9. Add the sugar (2 tablespoons) and stir. If you like you can add more Italian seasoning (about 1 teaspoon).
  10. Let the sauce cook on low for about 20 minutes.
  11. After the 20 minutes, taste and see if you should add more seasoning. If not, the sauce is ready to serve.

Note: If you are using ground beef. You will need to cook the meat in a separate pan.   Then drain the oil.  Add the meat to the pot with the cooked vegetables.

 

This is a quick and simple recipe to feed your family for a couple of nights.
