{"id":512,"date":"2018-09-17T16:21:03","date_gmt":"2018-09-17T20:21:03","guid":{"rendered":"https:\/\/telljannel.com\/?p=512"},"modified":"2018-09-17T16:21:03","modified_gmt":"2018-09-17T20:21:03","slug":"how-to-make-roux-for-etouffee","status":"publish","type":"post","link":"https:\/\/telljannel.com\/index.php\/2018\/09\/17\/how-to-make-roux-for-etouffee\/","title":{"rendered":"HOW TO MAKE ROUX FOR ETOUFFEE"},"content":{"rendered":"<p>Ingredients<\/p>\n<ul>\n<li>\u00bc cup vegetable oil<\/li>\n<li>\u00bc cup flour<\/li>\n<li>1 large onion, chopped<\/li>\n<li>1 bell pepper, chopped<\/li>\n<li>1-2 jalapeno peppers, chopped<\/li>\n<li>1 large celery stalk, chopped<\/li>\n<li>6 garlic cloves, chopped<\/li>\n<li>2 cups of stock\/broth<\/li>\n<\/ul>\n<p>Dried\/ powder seasoning:<\/p>\n<ul>\n<li>\u00bd Tsp salt<\/li>\n<li>\u00bd Tsp Italian seasoning<\/li>\n<li>\u00bd Tsp Cajun seasoning (Tony Chachere\u2019s Creole Seasoning)<\/li>\n<li>\u00bd Tsp Garlic powder<\/li>\n<li>\u00bc Tsp Old Bay<\/li>\n<li>\u00bc Tsp Black Pepper<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ul>\n<li>I usually chop all the vegetables first and put in a bowl. I put the garlic in a separate bowl.<\/li>\n<li>I pour out the dried seasoning in a small bowl, so I do not miss anything.<\/li>\n<\/ul>\n<ol>\n<li>Heat the vegetable oil in a heavy pot over medium heat. Stir in the flour. Let this cook and continue to stir until it turns chocolate brown. This usually takes about 10 minutes.<\/li>\n<li>Add the chopped vegetables (celery, bell pepper, jalapeno, and onion). Let cook for about 4 minutes. Continue to stir occasionally. Then add the chopped garlic and cook for 2 minutes.<\/li>\n<li>Add your dried\/powdered seasonings<\/li>\n<li>Add the stock\/broth and continue to stir. Bring the stock to a boil. Then turn stove down to simmer. Let the roux cook for 15 minutes. It will thicken up.<\/li>\n<\/ol>\n<p>Notes:\u00a0 If you want to make shrimp etouffee, then use seafood stock.
